Fryer chicken (3 to 4 lb), cut up and rinsed

Bell Peppers, chopped

Green Onions

Parsley (dried)

1 ˝ Cup

Chopped baked Ham or Pork

2 lbs

Smoked Sausage (andouille or similar)

Salt (to taste)

Black pepper

Cayenne pepper

Chili powder (or more to taste)

6 Cups

Rice

12 Cups

Cooking Instructions

 

  1. In large pot, brown the chicken on all sides in hot oil. Remove chicken from pot.
  2. Add veggies, parsley, ham, pork.
  3. Reduce heat and simmer for about 15 minutes until veggies are soft and browned.
  4. Add sausage and seasonings, stir and cook for around 5 minutes more until well blended.
  5. Add rice, stir and sauté rice for a few minutes.
  6. Add water and chicken, and mix well.
  7. Raise heat and bring to a boil.
  8. Reduce heat to low and cover pot, simmer for 45 minutes, stirring occasionally after first 15 minutes.
  9. Uncover pot for last 10 minutes to let the rice dry out some.
