Kale Superfood Salad
Ingredients
1/3 Cup Honey
1/2 Cup Apple Cider Vinegar
1/2 Tsp Salt
1/2 Tsp Ground black pepper
1/4 Cup Extra-virgin olive oil
1 Bunch Kale, stems removed and
leaves chopped
16 Oz Edamame (frozen
shelled, thawed)
1/4 Red onion, sliced
thin
1 Cup Carrot, shredded
1 Cup Dried perries
(Cranberries, blueberries, etc.
1/2 Cup Cashew peices
1/2 Cup Shelled roasted
sunflower seeds
?? Pumpkin or other
seeds as available.
Directions:
1.
Chop the Kale fairly fine
2.
Mix the Honey, Vinegar, Oil, Salt, & Pepper in a small bowl
3.
Add all of the ingredients together and toss well
