Ken's Gluten Free Irish Porter Cake

Ingredients

This recipe was adapted from a couple of non-GF recipes I found online, and it ended up tasting great!
The spices below are what I have used, but you can change the mix to taste or based on what you have on hand.
The same goes for the type and amound of dried fruit. You can also add nuts if you want.
The original recipe calls for porter or stout beer, but I have never seen a GF version of that. I just used RedBridge Sorghum GF beer.

Amount Ingredient
3 2/3 Cup Gluten Free Flour Substitute (the kind with Xanthan Gum)
1/2 tsp Nutmeg
1/2 tsp Cinnamon
1/4 tsp Ground Cloves
1/4 tsp Ginger
1/4 tsp Ground Allspice
1 tsp Baking Soda
1/2 Tsp Baking Powder
Dash Salt
 
16 Tbsp (1 lb) Butter (Kerigold is best!)
1 Cup Raw sugar or light brown sugar
1 Bottle Gluten Free Beer
2 Cups Mixed dried fruit (raisins, golden raisins, cherries, cranberries, etc)
3 Eggs

Cooking Instructions

  1. Preheat oven to 350 Deg.
  2. Grease a round cakepan, use nonstick or put parchment paper on the bottom.
  3. Melt butter in a sucepan
  4. Add beer, sugar, and dried fruit, and boil for 3 to 4 minutes, stirring frequenty. Remove from heat and let cool until lukewarm
  5. Mix flour, baking soda, baking powder, and spices in a large mixing bowl.
  6. Add the fruit mixture to the flour and stir.
  7. Whisk the eggs and add them gradually, mixing evenly throughout the mixture./LI>
  8. The mixture should be a fairly thick though sticky dough. Put it into the cake pan a little rounded in the middle.
  9. Bake in the oven for about 1 hour and 15 minutes (a knife should come out clean). It should be browned at the top.
  10. Let cool before slicing.
