Roast in Spanish Sauce

Ingredients

Amount Ingredient
2 to 3 lb. Chuck Roast (do not use a better cut of meat, works best with chuck!)
1 Large green pepper, sliced
1 Medium Onion, sliced
3 to 4 Tomatoes, chopped
2 tsp Salt (to taste)
2 tsp Garlic powder
2 Tbsp Cider Vinegar
dash Black pepper (to taste)

Cooking Instructions

  1. Preheat oven to 350 Deg.
  2. Tenderize mean by piercing all over with a knife
  3. Mix salt, garlic powder, Vinegar, pepper in a bowl
  4. Spoon salt, garlic, vinegar mixture onto all sides of roast, spreading to get even coverage.
  5. Place 1/2 of green pepper, onion, tomatoes into bottom of baking dish or dutch oven
  6. Place roast on top of vegetables
  7. Spread remaining vegetables on top of roast
  8. Cover dish and place into oven
  9. Bake for 2 to 2 1/2 hours at 350 Deg.

Slice the meat and serve the broth as a sauce for the meat. Serve the veggies as a side dish. Save the leftover broth for other recipes.
